Almond Chicken Stir Fry.
I’m a fan of the Junior League. My wife was a part of it for years and we had some fun times going to their parties.
I own three of their cookbooks. All three are stellar. Two are from San Diego with my first being Delicious Decisions from 1987. The second from San Diego is California Sol Food – 2004. The last was acquired in Idyllwild, CA at the Public Library Book Sale for a dollar. It’s San Francisco’s Junior League version called San Francisco Flavors – 1999.
What’s bitchin about this line of cookbooks is where some of these recipes come from. These young ladies hit up some of the best chefs in their town for original recipes. A majority are hits.
Unfortunate this one is not.
There is always a take away though.
Roasted whole almonds. I’ve never done it before.
Preheat oven to 400 degrees. Place 1 cup of raw almonds in shallow pan, stir here and there for 12-15 minutes. Have wooden spoon ready for young hands going in for repeated tasters of these efflorescent morsels.
