More specifically Eggplant stuffed Eggplant. 🙂
Sometimes it is the obscure that brings the picture back to light.
This is the first time I’ve actually cooked Eggplant in a recipe. Sure I’ve thrown some oiled slices on the grill with a beer in hand.
This was tasty and I ate the whole thing standing up after having one bite.
