Falafel Sandwich with Awesome Fava Beans

Box and canned meal alert. 

We really like Knor’s Falafel mix for a quick dinner. It’s so easy and hits all the boxes when we are after that fix and perfect for warm summer nights. 

We usually serve them with our favorite tzatziki sauce but tonight we made a quick aioli which worked beautifully as well. 

The surprise hit were the beans. My wife had Fassoulia at our local Greek restauant and wanted to try and give them a go at home. They were a knockout and awesome in the Falafel Sandwich. 

Fassoulia Beans 

1 can of fava beans 

2 cloves of finely minced garlic

1 teaspoon of cumin

Juice of 3/4 of a lemon

1/2 cup of olive oil or to taste

1 teaspoon of finely chopped parsley

Salt and pepper to taste

Sweat the garlic in 1/4 cup of oil, add cumin and give a few swirls, add the beans, salt and pepper to taste. Cook for about five minites and crush a few of the beans with a fork in the pan. Add more olive oil if desired. Take off heat, add lemon juice and finely chopped parsley. Serve in its own tapas bowl with warmed pita wedges  (May add chopped tomatoes as well)

Add some to the Falafel Sandwich. Tasty!
